Cod with Orange & Saffron Sauce

Cod fillet on a bed of lemony spinach with orange & saffron sauce. Red peppers & gherkins to garnish.

Ingredients: Cod fillet. 1 gherkin. Small red pepper. 2 oranges. Few saffron leaves. Spinach (as much as you like!).

Tip: This is a simple light lunch or dinner. You can use any type of fish you like, the meatier the better. I like to keep the skin on as it’s good for you.

Cook the fish fillet on a very hot pan skin side down.

Cook the spinach separately adding lemon juice at the end.

Sauce: In a saucepan pour the juice of 2 oranges. Add a pinch of saffron leaves (be minimal as the flavour can be over-powering), a pinch of sugar, 1 minced shallot, 1tbs butter. Simmer for 5 mins stirring gently. Puree in a blender. Season with salt.
