This is not a very quick salad as you have to wait for the pear to cool before adding it. However, it’s a nice salad to impress your guests with, as it shows you’ve made an effort!
Ingredients: 1 pear. Blue cheese. 1 beetroot shredded. Small handful of walnuts. Mixed green leaves of your choice.
Poach the pear in a saucepan for 5 mins (peeling it is optional). Wait for it to cool then cut it into long thin slices. Crush the walnuts. Cut up a small handful of blue cheese into small pieces (a small amount is enough as the taste can be over-powering).
In a bowl, mix all the ingredients together. Dress mildly with salt, olive oil and lime juice. Very easy. Very delicious.
