The first time I tasted this gorgeous Italian dessert was when I was 12 years old, and we were on a family holiday in Zurich. There was a restaurant at the hotel we were staying at which had the most amazing selection of desserts. I remember dad saying that I have to try Tiramisu. It was love at first taste! Tiramisu has been one of my favourite desserts ever since. Simple ingredients and method…genius combination of flavours.
Ingredients: 4 eggs, separated. 90g sugar. 500g mascarpone. 500 ml double cream. 2 vanilla pods. 350ml coffee. Savoiardi biscuits. Cocoa powder. 70% cocoa dark chocolate.
Whisk the yolks, half the quantity of sugar, mascarpone, double cream and vanilla until medium peaks achieved. Set aside. Whisk the egg whites and remaining half of sugar until stiff peaks achieved. Fold into the egg yolks and mascarpone mixture slowly.
Lay the Savoiardi biscuits at the bottom of your serving tray. I used little ramekins as well so I crushed the biscuits first then placed them on the ramekins. Use a brush to soak the biscuits with coffee. Take care not to over-soak them. Put half of the cream mix and dust with cocoa powder. Put another layer of biscuits soaked in coffee then cream mix then cocoa powder. Garnish with some dark chocolate shavings. Buon appetito!
