Chia Pudding

This makes for a great breakfast, snack or desesrt. It’s just the best thing ever! You can play around with this recipe and add different fruits or different flavours according to your taste, it never gets boring. And if you’re not convinced about eating these seeds then here’s a summary of their benefits:
They make you feel full for longer, balance blood sugar, prevent diverticulosis, abundant in Omega-3, make you feel more energised throughout the day, contain anti-ageing antioxidants, and the list goes on! Convinced yet??

Ingredients: 0.5 cup chia seeds. 2.5 cups almond milk. Frozen or fresh berries. Organic muesli. Honey. Raw vanilla powder or 1 vanilla bean.

Pour the almond milk into your Vitamix (or high speed blender) then addd the chia seeds and vanilla powder. Blend at a very low setting (setting 1 on the Vitamix) just to mix everything together evenly. Pour the mix into a bowl and allow it to stand for 15 mins. During that time, stir the mixture roughly every 5 mins to prevent the chia seeds from clumping.You will notice the pudding thickening quickly. Refrigerate until cold.

To serve, scoop some pudding into a bowl or jar then add a layer of organic muesli and berries then scoop in another layer of pudding and so on. You can drizzle some honey for added sweetness. Store any leftovers in a tightly sealed jar for the next day. Yum Yum Yum!
