This makes for a delicious side dish or a main light meal. Sweet potato is one of my favourite vegetables and what a beautiful vegetable it is. It’s so versatile, can be eaten with almost anything as well as just on its own.
Ingredients: 1 large sweet potato diced. Flesh of 1/2 an avocado. 1/2 cup coconut milk. 1/2 cup water. juice of 1/2 a lemon. Few coriander leaves. Avocado oil. Ground black pepper.
Roasting the potato: Pre-heat the oven to 200 degrees celsius. Place the diced up sweet potato on a baking tray and drizzle some avocado oil (about 2 tbsp) followed by ground black pepper and mix everything together. Place the tray in the oven and roast for 20 mins (or until the potato is cooked).
To prepare the sauce: In a blender, place the avocado, coconut milk, water, lemon juice and blend it all together until smooth. The sauce should be fairly thick and not too watery.
To serve: Place the potatoes in a dish and splash some of the sauce randomly. Follow with a few coriander leaves and grated lemon rind.
