This colourful raw salad can be a starter or a side dish. You can even add meat and enjoy it as a light main dish. I like to add mince chicken to mine and have it for dinner.
Ingredients: 1 yellow courgette. 1 cucumber. 6 kale leaves. 1 large handful of shredded red cabbage. 1/2 an avocado. 9 cherry tomatoes (mixed colours). 1 tbsp olive. 1/2 tbsp apple cider vinegar. 1/2 tbsp pomegranate molasses. 2 tsp sumac. 1/2 tsp sea salt. 1 tsp dried oregano.
Get all the ingredients ready and set aside. Use a spiralizer to spiralize the courgette and cucumber. Use a deep-cupped teaspoon to create avocado balls by scooping the avocado out until none is left.
To plate, lay out the kale and shredded cabbage first then follow with the sprialized courgette and cucumber. Place the avocado balls and tomatoes randomly. Drizzle the olive oil, pomegranate molasses & apple cider vinegar. Season with sea salt, sumac and oregano.
