Roast Pumpkin Salad

A lovely summary quick salad with a hint of sweetness.

Ingredients: 1/4 pumpkin. Bulgarian sheep cheese. Spinach. Assortment of nuts. Raisins.

Pre-heat the oven to 250 degrees. Chop up the pumpkin into cubes and place on a baking tray. Drizzle some olive oil, sprinkle sea salt, black pepper and oregano. Roast for 15 minutes.

To serve, place the pumpkin on a bed of spinach. Throw in some Bulgarian sheep cheese, an assortment of nuts and a few
raisins. Dress with olive oil and a sqeeze of lemon.
