Sweet Potato & Spinach Fritters

Wishing you all Ramadan Mubarak! These yummy fritters can be had as a side dish with your soup for iftar. Alternatively, they make for a perfect light snack for suhour (sehri). Make a big batch and keep it in the fridge, they last a good 4-5 days.

Ingredients: 1 onion finely chopped. 2 sweet potatoes. 2 big handfuls spinach roughly chopped. 1 handful Bulgarian sheep cheese. 1 egg. 7 tbsp brown flour. Sea salt. Black pepper. Dried oregano. Chilli flakes. Dried coriander.

Shred the sweet potatoes in a food processor. Add the onions, spinach, cheese and eggs. Season with sea salt, black pepper, oregano, coriander and chilli. Add the flour and mix everything together with a spoon. Shape into medium sized fritters.

You can either deep fry the fritters or cook them in a frying pan oiled with 1 tbsp of olive oil. I prefer the latter. Happy iftar everyone!
