Can never get enough of lamb shanks! So juicy and yummy! This is a simple lamb shank recipe. I found these ‘enough for 1 person’ lamb shanks in Carrefour. It’s best to marinate the meat a day before you cook it to make sure all the flavours are absorbed.
Ingredients: Sea salt. Black pepper. Coriander. Nutmeg powder. Small pinch of Cayenne pepper. Fresh garlic. 1 tbsp tomato puree. Juice of 1 lemon. Fresh mint. Chives.
Pre-heat the oven to a low temperature of 180 degrees. Mix all the ingredients together in a bowl, except for the mint and chives. Make a couple of slits on each side of the shank. Marinate the shank, making sure you cover all the meat. Place the lamb in a cast iron pot and cover with a lid. If you don’t have a cast iron pot THEN GET ONE! It makes such a difference – it traps the heat and acts as an oven in itself, the meat turns out more tender. Roast for about an hour.
To serve, place the lamb on a plate, drizzle some of the natural lamb juice on top then garnish with fresh mint and chives. Enjoy with a side dish of your liking.
